Healthy Back-to-School Snack

Are you looking for a healthy back-to-school snack? Something other than carrots or apple slices? My daughter-in-law, who also happens to be a Registered Dietician, made these energy balls for our Fourth of July getaway. They are a customizable source of fiber and protein and long-lasting energy. No food coloring. No preservatives. Just honest-to-goodness wholesome ingredients!

Energy Balls

1 cup of oats
1/4 cup dried fruit
1/4 cup chopped nuts
2 Tbsp PB2 powder
1/4 cup chia, flax, or hemp seeds
2-3 Tbsp of mini chocolate chips
3/4 cup peanut or other nut butter
1/4 cup honey

Mix all together in a bowl. Add more honey as needed to get the mixture to stick together. Roll into 15-18 golf-sized balls. Freeze and thaw as desired.
